MICHELIN Guide inspectors visit restaurants anonymously and rate them on food quality alone. Price, service, and décor do not factor into the score.

MICHELIN ranks restaurants using three tiers:

• One star: high quality cooking
• Two stars: excellent cooking
• Three stars: exceptional cuisine, the highest rank

Only 83 restaurants across the 23 EU countries MICHELIN rates currently hold three stars. France accounts for more than a third of them.

France Leads the EU in Both Total and Three-Star MICHELIN Restaurants

France holds 652 total MICHELIN-starred restaurants. That is more than any other EU country MICHELIN rates.

It also leads the three-star tier with 30. That is over a third of the EU’s 83 three-star restaurants.

Italy, Germany, and Spain hold the next-most total starred restaurants. Their three-star counts don’t follow the same order:

• Italy: 382 total, 15 three-star
• Germany: 338 total, 12 three-star
• Spain: 299 total, 16 three-star

Spain has fewer total starred restaurants than Italy or Germany. It still ranks second in the EU for three-star restaurants.

MICHELIN published its first restaurant guide in France in 1900. That head start compounds over time.

Inspectors have had over a century to find and re-evaluate French restaurants. Most other EU countries only gained MICHELIN coverage decades later.

France’s culinary tradition also carries recognition beyond MICHELIN. UNESCO added the “gastronomic meal of the French” to its Intangible Cultural Heritage list in 2010.

Denmark Outranks Much Larger EU Economies in Three-Star Restaurants

Denmark’s population is just 5.9 million, as of June 2026. Despite that, it ranks 5th among the 23 EU countries MICHELIN rates.

Denmark holds 3 three-starred restaurants. That puts it ahead of countries several times its size:

• Netherlands: 1 three-star restaurant, population 18 million 
• Belgium: 2 three-star restaurants, population 11.9 million 
• Austria: 2 three-star restaurants, population 9.2 million

The wider Nordic region’s culinary reputation has grown sharply over the past 15 years. Denmark’s government has invested directly in that trajectory.

The Gastro 2025 initiative promotes Danish food production and dining internationally. It launched in 2019.

Many Zero-Star EU Countries Are New to the Guide or Not Rated at All

Four EU countries have no MICHELIN Guide selection at all: Bulgaria, Cyprus, Romania, and Slovakia. They are unrated, not zero-starred.

Most other countries showing zero three-star restaurants are recent additions to the guide instead. Poland and Slovenia recorded their first-ever MICHELIN-starred restaurants in 2020.

The guide expanded to Kraków and Ljubljana that year.

Hungary’s national guide only launched in 2022. Before that, MICHELIN only rated restaurants in Budapest.

A country with zero three-star restaurants today may simply not have had inspectors visiting long enough to find one.

The EU’s three-star map reflects two different things at once: culinary quality and the guide’s own history in a given country.

Denmark’s results show a small country can still compete at the very top. Some countries are still waiting for their first three-star restaurant.

Others are still waiting for their first MICHELIN Guide altogether.
